Cell Wall Changes of Papaya Fruit Treated with 1-Methylcyclopropene: Postharvest Analysis through SEM and FT-IR Spectroscopy

1-Methylcyclopropene (1-MCP), is a widely researched and commercially used molecule to delay fruit ripening improve the shelf life, both climacteric non-climacteric fruits. Increasing life keeping quality, especially of important fruits like papaya using 1-MCP, which undergoes rapid softening during process required detailed investigation structural changes cell wall. These include modifications in wall polysaccharide structure due increased activity hydrolyzing enzymes, pectin, hemicellulose cellulose degradation that results softening. Pectin determines extent ripening. Hence, present describes role 1-MCP retaining firmness, postharvest. The ultrastructural peel pulp were studied Scanning Electron Microscope (SEM). pectin untreated treated was analyzed through reliable technique, FTIR spectroscopy (Fourier transform-infrared (FT-IR)). study revealed postharvest application at 900 ppb fruits, stored under cold storage (14°C) effective higher firmness by suppressing degradation, are triggered ethylene.
